    Title: Deluxe Mashed Potatoes
    Categories: Potatoes, Dairy, Cheese
    Yield: 6 Servings

    2 1/2 lb Potatoes
    3 oz Cream cheese; softened
    1/2 c Sour cream
    1 tb Chopped chives
    3/4 ts Onion salt
    1/4 ts Pepper
    1 tb Butter
    Paprika; opt

    Peel and dice the potatoes; place in a saucepan and
    cover with water. Cook over medium heat until tender;
    drain. Mash until smooth (do not add milk or butter).
    Stir in cream cheese, sour cream, chives, onion salt and
    pepper. Spoon into a greased 1 1/2 qt. baking dish. Dot
    with butter; sprinkle with paprika if desired. Cover and
    bake @ 350oF/175oC for 35-40 minutes or until heated
    through.

    Title: Tennessee Peach Pudding
    Categories: Fruits, Dairy, Puddings
    Yield: 8 servings

    1 c A-P flour
    1/2 c Sugar
    2 ts Baking powder
    1/2 ts Salt
    1/2 ts Ground cinnamon, optional
    1/2 c Milk
    3 c Sliced, peeled peaches

    MMMMM--------------------------TOPPING-------------------------------
    1 1/2 c Water
    1/2 c Sugar
    1/2 c Packed brown sugar
    1 tb Butter
    1/4 ts Ground nutmeg
    Vanilla ice cream; opt

    Set oven @ 400oF/205oC.

    Combine flour, sugar, baking powder, salt and, if
    desired, cinnamon. Stir in milk just until combined;
    fold in peaches. Spread into a greased 8-in. square
    baking dish.

    For topping, combine water, sugars, butter and nutmeg in
    a large saucepan. Bring to a boil, stirring until sugars
    are dissolved. Pour over peach mixture. Bake until
    filling is bubbly and a toothpick inserted in topping
    comes out clean, 40-50 minutes. Serve warm or cold, with
    ice cream if desired.
