2 c Zucchini; shredded
2 Eggs; slightly beaten
4 Soda crackers; crushed
Salt & pepper; to taste
Oil; for frying
Soy sauce
Drain moisture from zucchini by spreading on 2 or 3 layers of paper
towel for 15 to 20 minutes. Put zucchini in a bowl & add eggs,
crackers, salt & pepper. Mix. Spoon mixture into a hot frying pan,
covered lightly with oil. Fry until browned on both sides. Serve with
soy sauce. Good side dish with Asian foods.

6 Eggs
1/2 c Flour
1 tb Soy sauce
1 c Celery or waterchestnut;
-(optional)
1/2 ts Salt
1/2 c Onion; (optional)
4 c Zucchini; grated & drained
1/2 c Meat; pre-cooked, (optional)
Mix eggs, soy sauce, and salt. Stir in remaining ingredients. Use 1/3
cup per patty. Shape and fry in pan.
