1 bn Watercress
2 tb Lemon juice
1 tb Herbed vinegar
1/2 c Soy mayonnaise
1/2 lg Tomato; chopped
4 tb Cilantro; coarsely chopped
Salt; to taste
Black pepper;
- freshly milled,
- to taste
Very tangy.
Blend 2/3rds of the watercress in a blender with lemon, vinegar, and
mayonnaise until smooth. Coarsely chop the remaining watercress and
stir into the blended ingredients, together with the tomato and
cilantro. Add salt and pepper.
