    Title: Gomasio

    Yield: 4 Cups

    3 1/2 c Unhulled sesame seeds
    1/2 c Salt

    Toast sesame seeds in a large heavy skillet until evenly browned.
    Beware of seeds popping. When toasted, grind to a meal in an electric
    blender with salt. Put into airtight jars and use as a condiment for
    sprinkling on food.

    Yield: 1 /2 cup

    7 tb Sesame seeds; toasted
    1 tb Sea salt

    Gomasio is a Japanese condiment made with ground sesame seeds and sea
    salt that imparts a delicious salty-nutty flavor to vegetable, grain,
    and pasta dishes. It can be purchased ready-made in Asian markets and
    natural foods stores or made easily at home. I like to keep some
    gomasio in a shaker to sprinkle on pasta instead of Parmesan cheese.

    Place the sesame seeds and sea salt in a food processor or blender and
    process until well ground but with some texture remaining. Transfer
    to an airtight container and store in the refrigerator, where it will
    keep for several weeks.
