    Baked Oatmeal

    3 c Oatmeal
    1/2 c Brown sugar; up to 1 c
    2 ts Baking powder
    1/2 ts Cinnamon
    1/2 ts Salt
    1/2 c Applesauce
    1 ts Vanilla
    2 Eggs or egg replacer
    1 c Rice milk
    1/2 c Raisins or blueberries; up to 1 c

Preheat oven to 350?F. Mix the dry ingredients in one bowl. Mix the
wet ingredients in another bowl. Stir the wet and dry ingredients
together and add the raisins or blueberries. Spread in a 9x9" pan,
lightly sprayed with nonstick spray. Bake 20 to 30 minutes. Serve
as-is, or top with some sort of milk.

    Notes:

This turns out almost like a cake. One cup of sugar made it way too
sweet for me; I'll use 1/2 cup next time. I did use egg replacer and
had good results. I also used rice milk instead of regular cow milk.
Maybe soy milk would work just at well. The recipe called for 1/2 cup
of nuts too, but that would drive the fat content up, so I edited it
    out for the list.

    Hi Ben,

    Baked Oatmeal

    3 c Oatmeal
    1/2 c Brown sugar; up to 1 c
    2 ts Baking powder
    1/2 ts Cinnamon
    1/2 ts Salt
    1/2 c Applesauce
    1 ts Vanilla
    2 Eggs or egg replacer
    1 c Rice milk
    1/2 c Raisins or blueberries; up to 1 c

An old friend gave us her version of this some years ago; it has become
a cold weather staple for us. I'll make up a pan-ful; we'll cut it into
squares and freeze them, pulling out a square to nuke for a quick, hot breakfast. Norma's recipe has a layer of oatmeal, a layer of cream
cheese abd sugar, layer of blueberries and topped with another layer of oatmeal. I gave a copy of the recipe to my physical therapist this
spring; when I saw him in August, he told me he makes it about once a
    week.

I'll post the recipe in a few days, still working on getting myself
    used to the "new normal".
