    Title: Make-Ahead Hearty Six-Layer Salad
    Categories: Pasta, Greens, Poultry, Vegetables, Dairy
    Yield: 12 servings

    1 1/2 c Uncooked orichette (small
    - shells)
    1 tb Canola oil
    3 c Shredded lettuce
    3 lg Hard-boiled eggs; sliced
    1/4 ts Salt
    1/8 ts Pepper
    2 c Shredded, cooked, chicken
    10 oz Box peas; thawed

    MMMMM--------------------------DRESSING-------------------------------
    1 c Mayonnaise
    1/4 c Sour cream
    2 Green onions, chopped
    2 ts Dijon mustard

    MMMMM--------------------------TOPPINGS-------------------------------
    1 c Shredded Colby or Monterey
    - Jack cheese
    2 tb Minced fresh parsley

    Cook pasta according to package directions; drain and
    rinse with cold water. Drizzle with oil and toss to
    coat.

    Place the lettuce in a 2 1/2 qt. glass serving bowl; top
    with pasta and eggs. Sprinkle with salt and pepper.
    Layer with chicken and peas. In a small bowl, mix
    dressing ingredients until blended; spread over top.
    Refrigerate, covered, for several hours or overnight.

    Just before serving, sprinkle with cheese and parsley.

    Title: Shrimp Pasta Salad
    Categories: Pasta, Seafood, Vegetables, Citrus, Dairy
    Yield: 10 Servings

    8 oz Dry, small pasta shells
    - (orichette)
    1 lb Peeled, deveined, cooked
    - shrimp; chopped
    1 c Peas; thawed
    4 Green onions; chopped
    1/4 c Minced fresh parsley
    1 c Mayonnaise
    1 c Plain yogurt
    1/4 c Lemon juice
    2 tb Snipped fresh dill
    1/2 ts Salt
    1/4 ts White pepper

    Cook pasta according to package directions. Drain; rinse
    with cold water and drain again.

    In a large bowl, combine pasta, shrimp, peas, green
    onions and parsley. Mix remaining ingredients; stir into
    pasta mixture. Refrigerate, covered, at least 2 hours.
