Title: Cranberry Lime Macaroons

2 lg Egg whites
2/3 c Sugar
2 ts Vanilla extract
1 1/2 ts Grated lime zest
1/2 ts Salt
3 c Unsweetened fine shredded
- coconut
1/2 c Dried cranberries; chopped
In a small bowl, whisk egg whites for 1 minute. Whisk in
the sugar, vanilla, lime zest and salt. Stir in coconut
and cranberries.
Drop by rounded tablespoonfuls 2-in. apart onto
parchment-lined baking sheets. Bake @ 350ºF/175ºC for
15-18 minutes or until golden brown. Cool for 5 minutes
before removing from pans to wire racks.
