    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Coffee-Poblano Sauce
    Categories: Chilies, Sauces, Citrus, Herbs, Beef
    Yield: 1 Pint

    1 lg Poblano chile
    2 tb Olive oil
    1/4 c Onion; minced
    1 ts Tomato paste
    2 1/3 c Canned beef broth
    2/3 c Fresh orange juice
    2 tb Fresh lime juice
    2 tb Golden brown sugar
    2 tb Mild-flavored (lt) molasses
    2 ts Instant espresso powder
    2 ts Orange peel; grated
    1 1/2 ts Lime peel; grated
    1/2 ts Cumin; ground
    2 ts Cornstarch
    2 ts Fresh cilantro; chopped

    Roast chile. Peel, seed, and finely chop.

    Heat oil in heavy large saucepan over medium heat. Add
    chile and onion and saute 3 minutes. Mix in tomato paste.
    Add 2 cups broth, orange juice, lime juice, sugar,
    molasses, espresso powder, orange peel, lime peel and
    cumin. Boil gently until reduced to 1 1/2 cups, stirring
    occasionally, about 20 minutes.

    Mix cornstarch and remaining 1/3 cup broth in small bowl.
    Add to sauce and boil until slightly thickened, stirring
    frequently, about 2 minutes. Mix in cilantro.

    Can be made one day ahead. Cover and refrigerate. Rewarm
    before using.

    This sauce is served over steaks that have been seasoned
    with cumin, cloves, nutmeg, and onion powder and then
    sauteed.

    Title: Coffee Pot Roast
    Categories: Beef, Crockpot, Vegetables, Potatoes
    Yield: 8 Servings

    6 Carrots; peeled, diced
    2 c Potatoes; peeled, diced
    3 lb Beef chuck roast
    Salt & pepper
    14 oz Can diced tomatoes
    1 c Black coffee
    1 c Water

    Put vegetables in cooker. Add beef, sprinkle with salt
    and pepper. Add tomatoes and liquids. Cover and cook on
    low 8 ~ 10 hours or until tender. If desired, thicken
    with flour and water base.

    Title: South American Coffee Punch
    Categories: Beverages, I scream, Dairy
    Yield: 30 Servings

    8 Cinnamon sticks
    1 ga Hot strong coffee
    1 qt Whipped cream
    4 ts Vanilla
    2 qt Coffee ice cream
    1/4 c Sugar

    Add cinnamon sticks to hot coffee. When cool, remove
    cinnamon. Add whipped cream, vanilla, ice cream and
    sugar. Float more whipped cream on top. Serve from
    punch bowl into tall iced glasses, partially filled
    with finely chopped ice.

    Serves 30.

    Title: Chocolate Coffee
    Categories: Beverages, Chocolate, Dairy
    Yield: 12 Servings

    1 c Sugar
    1 c Baking cocoa
    1 c Boiling water
    1 ts Vanilla extract
    1/4 ts Salt
    4 c Heavy whipping cream; whip'd
    8 c Hot strong brewed coffee

    In a large heavy saucepan, whisk the sugar, cocoa and
    water until smooth. Cook and whisk over medium-low heat
    until mixture forms soft peaks when whisk is lifted and
    resembles thick hot fudge sauce, about 35 minutes.

    Remove from the heat; stir in vanilla and salt. Transfer
    to a bowl; refrigerate for at least 2 hours.

    Beat the chocolate mixture. Add 2 cups whipped cream;
    mix well. Fold in remaining whipped cream. For each
    serving, place about 1/2 cup chocolate cream in 2/3
    cup coffee or milk; stir to blend.

    Yield: 12 servings.

    Title: Coffee Frappe

    Yield: 1 servings

    3 c Ice cubes
    1 c Strong coffee; cold
    2 tb Granulated sugar
    2 tb Vanilla syrup
    2 Shots coffee liqueur
    Whipped cream
    Cinnamon
    Chocolate shavings

    Add all ingredients to a blender and blend until smooth.
    Pour into a large, tall glass. Garnish with a dollop of
    whipped cream and desired amounts of cinnamon and
    chocolate.
